A mezcal ensemble’s creation is a special display of synchrony in the agave world. The maestro mezcalero learns to identify the ideal moment of maturation for different wild agaves, each with its own rhythm of life, and manages to coordinate their harvests to produce a harmonious mezcal, where the unique qualities of each species are combined without losing their own character.
